Breakfast Granola squares

Breakfast is often one of those times where I generally fail at being organised! Brunch is another matter! but breakfast is usually the meal i skip or eat on the run. On those busy Mornings when I just need to grab something on the run out the door, I need something yummy and full of goodness. I have been looking for a few recipes to help keep me on track and have some pre-prepared breakfast staples at my fingertips each morning to grab with my coffee to go as I dash out the door.


Having these on hand will be a great time saver. I had found few recipes online for granola bars which I tinkered with and came up with my own spin on breakfast granola bars. These are so easy to make and perfect for anyone who needs a make ahead breakfast or mid morning snack


My on the run Breakfast squares


Ingredients list


200 grams of Giant rolled oats

100 grams of light brown sugar

100 grams of butter

3 tbs of honey or agave syrup

50 grams of cranberries

50 grams of apricots

30 grams of hazelnuts

1/4 Tsp of cinnamon

optional - 30 grams of seeds or raisins


Time - 30 minutes

Difficulty - Easy

Oven Preheat - 180 fan or gas mark 6

How to


Pulse the oats and butter in a food processor for about 20-30 seconds, trying not to make the mixture too fine



Add the rest of the ingredients to the bowl and mix together, making sure the fruits and nuts are evenly distributed throughout the mix. Next, place the mixture into a 20cm x 20cm tin.



I have acquired a lot of baking tins and baking pans over the years but this little one gets used a lot for bars, tray bakes and jellies


You can grease the tin with a little butter, or use baking paper if you'd rather not add the extra butter, however I do find it helps crisp the bars up around the edges and bottom. I also find if helpful at this stage to pre cut the bars as they can be a little messy to cut once they are baked. Make sure at this stage you tightly pack the mixture into the tin so it will stay together when it bakes and won't fall apart when cooled.




Bake in a preheated oven at 180c fan/ gas mark 6 for around 20 minutes when they should be golden brown. Leave to cool in the tin, if you remove them too quickly they will fall apart.




Once completely cooled you can remove the bars form the tin, These will keep in an air tight container for around a week. Perfect for breakfast on the go, a mid morning snack or wrapped up as foodie gift for someone special.


I love baking these bars and they are truly simple, very little washing up too! The only trouble is, they don't last very long in our house!
